Cashew "no-cheese" cake

crust

  • 70g whole wheat flour
  • 40g almond powder
  • 10g cocoa powder
  • 1 tsp salt
  • 2 tbsp veg. oil (olive, canola)
  • 2 tbsp maple syrup

In medium size bowl, mix dry ingredients with whisk.  Add oil and mix with spoon until oil is incorporated.  Incorporate maple syrup.  With roller or fingers, spread crust into a 8" x 8" silicone baking pan (or similar).

filling

  • 200g raw cashew nuts, soak 2 hours, rinse and drain
  • 150g soymilk
  • 140g coconut oil
  • 140g maple syrup
  • 1 tbsp lemon juice, optional

In blender or food processor, blend all ingredients until smooth and creamy.  Pour over crust and spread evenly.  Bake for 15 min at 320F.
